I recommend going down to your fave or closest sushi joint and picking up some salmon sashimi from them for this salad. If that isn't an option you can easily substitute lox or a filet for a more substantial meal.
Dressing:
2 tablespoons light sour cream
2 tablespoons plain yogurt
4 tablespoons light mayonnaise
2 tablespoons olive oil (optional)
1 teaspoon white wine vinegar
1 1/2 teaspoon chopped fresh dill
1 tablespoon chopped fresh basil
2 tablespoons lemon juice
1/2 teaspoon horseradish
2 cloves minced garlic
1 bunch watercress
1 cup bean sprouts
12 pieces salmon sashimi
1/4 cup thinly sliced red onion
Servings: 4
2 tablespoons plain yogurt
4 tablespoons light mayonnaise
2 tablespoons olive oil (optional)
1 teaspoon white wine vinegar
1 1/2 teaspoon chopped fresh dill
1 tablespoon chopped fresh basil
2 tablespoons lemon juice
1/2 teaspoon horseradish
2 cloves minced garlic
1 bunch watercress
1 cup bean sprouts
12 pieces salmon sashimi
1/4 cup thinly sliced red onion
Servings: 4
Combine dressing ingredients in a food processor or small bowl. Toss with watercress, bean sprouts and red onion in a medium size bowl. Plate and place sashimi on top. Drizzle dressing on top of sashimi.
